I am getting back on track!

Hello my friends!
Things are moving along really nice. I am down 20 lbs since my revision. I have been exercising 2 to 3 times a week and so far this time around I am enjoying it.

I also wanted to share this recipe with you today. It is crust-less Zucchini pie. I made it last night and it is soooo yummy. I got it from Skinnytaste.com

Crust-less Summer Zucchini Pie



A simple savory pie made with summer zucchini, shallots, mozzarella and parmesan cheese. If you're looking for a tasty way to use up your summer zucchini, this is it!

It makes a wonderful side dish to any meal or serve it at a potluck or brunch.

To make shredding the zucchini easier,  just throw it in the food processor. You'll want to put the zucchini in a cheese cloth and give it a good squeeze to take out all the moisture.



Crust-less Zucchini Pie

Calories: 125.3  • Fat: 4.8 g • Protein: 8.1 g • Carb: 13.1 g • Fiber: 2.0 g • Sugar: 2.5 g

Ingredients:

  • 10 oz shredded zucchini, all liquid squeezed out 
  • 1/2 cup shallots, chopped
  • 1/4 chopped fresh chives
  • 1/2 cup part skim mozzarella
  • 2 tbsp grated parmesan cheese
  • 1/2 cup white whole wheat flour (King Aurthur)
  • 1 tsp baking powder
  • 2/3 cup fat free milk
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • 1/2 tsp kosher salt
  • fresh cracked pepper to taste
  • cooking spray (I used my misto)

Directions:

Preheat oven to 400°. Lightly spray a pie dish with cooking spray or your misto. Combine zucchini, shallots, chives, and mozzarella cheese in a bowl.

Sift flour and baking powder in a medium bowl. Add remaining ingredients to the bowl and blend well. Combine with zucchini mixture and pour it into the pie dish.


Top with parmesan cheese and bake 30-35 minutes or until knife comes out clean from the center. Let it stand at least 5 minutes before serving.

Makes 6-8 servings.

I made it through the week

Well, it is Friday and I made it though the week at work. I was able to set up an eating schedule and pretty much stick to it. Also I got to start pureed foods on Thursday. It was so wonderful. LOL Actually I had been looking forward to Shelly's Baked Ricotta I just love that stuff and so easy to make. With it being so hot here in Georgia (Plus my downstairs AC is on the fritz), I was able to just nuke it.

On a sad note. My Aunt Barnetta passed on Thursday. It was a very sad day for me. She was going to be down here next week to help me prepare to move in to my new place. Her death was so unexpected. I am glad she is now with my Mom and her sisters in heaven.

Back to work and Shelly's Giveaway

Well tomorrow I am headed back to work after my 2 week medical vacation. I am a little nervous about this as I need to make sure I get in all my full fluids.
So far I have my protein and water pack. In the fridge I have my pudding, soup, jello, and milk.
I will also resume my rip class (weight lifting to music) and Tuesday resume my Zumba class. I am excited about that!

Hello! Long time no me. I know. I just got really frustrated. All that up and down, with more up's than downs.
After going back and forth with my doctor I went and had a revision done to my RNY-BYPASS. I am happy to report that I am down 12 lbs!! yea me right!
Well, I have been on clear liquids for 2 weeks, and I am now on full liquids. I must say this is almost like the orginal bypass procedure as I can not get much down. Which is a good thing. For Breakfast today I made a 4 ounce protein shake. I could only get 2 ounces down before I was full! I have add at least 3 ounces of water in, which I must improve. I should be getting down at least 64 oz a day this week. It is so hard as I am sure if you have gone though weight loss surgery you know that!
For lunch I am attempting to have 3 oz of creamy cream of potato soup, with a sugar free Popsicle. The soup is sooo yummy LOL.

If anyone out there is reading this blog please let me know you are there. I want to know if the outside world is reading this. Also let me know if I can help you with your own weight loss journey.

I will try to post more often than a few months at a time. Beside if I know someone out there is reading my blog it will make it easier.
